Roast Pork with Herb Roasted Potatoes |
This is for everyone on my Facebook fan page who asked how I flavored my pork roast and the pan-roasted potatoes.
You can always make herb roasted potatoes even without a roast. The drippings do give the potatoes some extra flavor, but you can roast them by themselves. Just toss with a bit of olive oil, use the rub the same way and roast about 1 1/2 hours for nice crispy potatoes.
Roast Pork with Herbed Roast Potatoes
1 pork rib/loin end roast (4-5 lb)
2 lbs medium potatoes, peeled and cut in half
Rub:
1 tbs salt
1 tbs black pepper
1 tbs garlic powder
1 tbs onion powder
1 tsp crushed thyme (the dehydrated kind)
1/2 tsp sugar
Mix all rub ingredients.
Rub about 1 tbs of the rub on the pork roast. Place in a roasting pan and roast at 350 degrees F for about 1 1/2 hours.
Remove roast from the oven (enough drippings should have accumulated at the bottom of the roasting pan in the stated time, if not, return to oven for 30 more minutes). Place potatoes in pan and coat with the drippings. Sprinkle with desired amount of rub.
Return roast to oven. About 30 minutes before roast is done, turn potatoes and sprinkle with additional rub.
Garnish potatoes with chopped fresh parsley before serving.
Meal should serve 4.
