What better way to usher in summer than a fine, chilled pasta salad?
This salad combines a bit of everything. In fact, it could be a complete meal if you wanted it to be, but it’s great served as a side.

I incorporated the general theme of a classic macaroni salad along with a hack of an Amish broccoli salad. The combination really is great here.
If you want the salad more pungent and oniony, then add about 2-3 tbs of chopped onion.
This is also a good way to use up leftover cooked macaroni and broccoli! But any leftover veggie will do here, so make it totally your own!

Loaded Pasta Salad
Ingredients
- 2 cups cooked pasta of any shape I used med. shells
- 2 cups steamed baby broccoli florets
- 4 slices bacon diced
- 1/2 cup diced 1/4-inch sharp cheddar cheese
- Salt & pepper to taste
- Dressing:
- 1 cup mayonnaise
- 2 tsp ranch seasoning mix
- 1 tbsp cider vinegar
- 1 tbsp sugar
- 1 tbsp water
- 1 tsp garlic powder
- 1/4 tsp pepper
Instructions
- Mix dressing ingredients in a large bowl.
- Combine all other ingredients and mix well.
- Chill for at least 2 hours.

How does this do overnight? I'm looking for salad I can prep night before and then put in cooler for picnic.

What I'd do under those circumstances is make the salad and the dressing then refrigerate both separately, but don't put the dressing on until just before you pack it in your cooler.
